nutritarian diet meal plan Black-Eyed Pea Salad/ Vegan/ Healthy

This is a simple, delicious, vegan, black-eyed pea salad, which is great for starting off the New Year with some good luck, or just enjoying any time of year. Enjoy!

Salad Ingredients-
Approximately 31 oz Black-eye peas (I used 2 15.5 oz cans)
1 medium/large sized tomato
1 medium/large red bell pepper
1 Poblano pepper
1/2- 3/4 cup corn (I use roasted frozen corn, I love the roasted corn!)
1/2 small red onion
1/2 large cucumber or a whole small cucumber (I used the English cucumber and left on the skin- I buy organic)
fresh parsley, use as much or little as you like. I used about 1/3 cup (you could use cilantro too, that goes great as well in here).

Dressing Ingredients-
1/4/1-3 cup Tahini (I used about 1/4, but you could use more if you prefer it more creamy and flavorful)
1/3 cup balsamic vinegar
the juice of 1 large lemon
1 tbsp whole grain dijon mustard (or any mustard would do)
1 tsp garlic powder
1 tsp onion powder
salt & pepper to taste

Rinse and drain black-eyed peas
add to a large bowl
chop and dice veggies into desired sizes
add to bowl

Mix dressing in a separate bowl, add to large bowl. Mix well.
Squeeze the juice of half a lime on top, mix again. Serve. Top with a little fresh parsley (or cilantro) and lime wedge- if you want to be fancy.
